Spelled (dinkel in Germany, kamut in the USA, spelled) is the general name of a group of special types of wheat with brittle ear and membranous grain - semi-wild, - relatively speaking ancestors - all modern wheat of hard and soft varieties._cc781905-5cde-3194- bb3b-136bad5cf58d_ It is thought  that the original chromosome set of spelled was so different from wheat that it was impossible to obtain the latter without the use of genetic engineering more than nine thousand years ago. Subsequently, wheat and spelled coexisted without interbreeding. It is thanks to the original chromosome set that the latter has retained its dietary properties.

 

Spelled - a real find for those allergic to wheat gluten (gluten). Of course, it is also present in spelled, but of a different composition, and spelled products are well absorbed by a good half of those who suffer from intolerance to wheat products.

 

Almost complete rejection of mankind during the last 200-300 years from the cultivation of spelled and spelled in favor of naked wheat had an objective basis for the industrial revolution. High rates of industrialization required a large number of cheap products for millions of workers.

 

The yield of new varieties of common wheat was three times higher than that of its great-grandmother - spelled. It has become incomparably easier to thresh grain that is not now fused with film shells, but at the same time the content of iron, which is always deficient in the human body, has decreased. In addition, the already mentioned phenomenon of allergy to gluten (gluten) contained in wheat has spread.

 

Fortunately, in recent times in the world and in Ukraine came the understanding of the importance of reviving the production of spelled products. Its cultivation  does not require mineral fertilizers, so it does not contain carcinogens and other harmful substances, but more than wheat, iron, protein, fiber, B vitamins. Spelta is a dietary product, when its use is less hungry due to long-term processing of carbohydrates by the body.

 

Spelled is an ideal food product for a rational and balanced diet, a natural resource that strengthens the immune system. Spelled is especially useful for patients with diabetes and pancreatic disorders, to normalize the endocrine, cardiovascular and digestive systems, hypovitaminosis, anemia, chronic fatigue syndrome, increased physical and mental stress.

 

Spelled porridge  has a pronounced wheat flavor with a slight nutty tinge. The own taste of spelled is dimly expressed, and it perfectly reveals the taste of related products - and as a side dish to meat and fish, and as a stand-alone dish with vegetables, and as an alternative to rice in pilaf and risotto.

 

Porridge from crushed spelled of the smallest fraction (fifth number, 1 mm) - tastier than the usual semolina due to the nutty flavor and inhomogeneous structure. Spelled flour has a high content of gluten and very high whiteness, the dough is more pliable. Both the shell and the grain itself are rich in useful trace elements and vitamins, so the value of spelled is not reduced by the method of grinding. Trial pastries in the bakery of our company have shown that spelled bread has excellent taste; especially effective use of spelled flour in the manufacture of pizzas, cookies and other confectionery.

 

For us, as a processor, the use of spelled is not only the introduction of new technologies, but above all the opportunity to provide people with the product that their body needs.
